Saturday was our first wedding anniversary. And, like it was a year ago, it was raining out.
The bakery that we used for our wedding cake makes a complimentary, fresh top of cake if you choose not to put your cake top in the freezer for a year. We decided to opt out of freezer-burned cake and went with a new one. I picked it up from The Cake in a Box during the day Saturday.
My husband worked during the day so I spent it hanging out with mom, experimenting in the kitchen. Something we do quite often.
She found this recipe in the newspaper:
And decided to make the English muffins. Believe it or not, they were pretty easy! There are two rises so they take long for that reason.
After mixing the dry and wet ingredients into a dough, you let it rise for an hour. Then you form the dough into 12 even, flat balls and let those rise.
After that you put them onto a griddle for a few minutes to brown the sides.
You then have beautiful English muffins!!
They were much better than store-bought English muffins. Fluffy as opposed to dense and flat.
Later that night, Tim and I went to Mooo in Boston for dinner. Before leaving, we busted open this gift my sister and her boyfriend had given us.
There’s a bottle of wine for the 1st, 3rd, and 5th anniversaries that you open. This time was a Layer Cake Malbec. Yum. Appropriately eaten with a slice of our wedding cake. Yes, before dinner.
I didn’t take any pictures at Mooo because 1. It was dark and 2. I felt it was too upscale to be whipping out my iPhone 3. It was our anniversary.
For an appetizer we order fried calamari with peppers. Dinner for me was Steak Au Poivre (pepper-crusted sirloin) with a bordelaise sauce and Tim ordered rack of lamb. The best was a flight of side dishes. Yes, a flight. In our flight was whipped mashed potatoes, parmesan truffle fries, squash puree, and creamed spinach. OMG it was perfect. For dessert, we split a vanilla creme brulee. We are on a Negroni kick and ordered a couple of those. A Negroni is a cocktail of sweet vermouth, gin, and campari. A perfect night!
